If you didn’t get a chance to celebrate Pi Day in March — or if you want to keep the party going — this is the recipe for you. Ingredients: 4 potatoes kosher salt, to taste 1/2 cup milk 2 1/2 tablespoons butter 1/2 cup beef broth 1 cup frozen peas 1 cup frozen corn 1/2 onion 5 button mushrooms 2 fresh garlic cloves ground black pepper, to taste white pepper, to taste 1 pound 80% lean ground beef 2 tablespoons all-purpose flour 1/2 cup liquid whole eggs 1/3 cup Parmesan cheese pan spray paprika, to taste Tools: cutting board peeler chef’s knife large bowl strainer stockpot rubber spatula small pot potato masher sauté pan baking pan Preparation: Step 1: To prepare the mashed potatoes, peel the potatoes, chop them into large chunks, and soak them in a bowl with cool water for 5 minutes. Drain the potatoes and put them in a stockpot. Fill it with cool water 2 inches higher than the potatoes and salt the water to be as salty as the sea. Put the lid on the stockpot, and boil the potatoes until they’re fork tender. Step 2: In a small pot, heat the milk and 1 tablespoon of butter and add them to the potatoes after they’ve finished cooking and have been drained and returned to the pot. Use a potato masher to mash the potatoes, and taste them to see whether they need additional seasoning. Set aside. Step 3: Prepare the beef broth according to the package instructions. Set aside. Step 4: In a small pot, bring 1 cup of water to a boil, and add the frozen peas and corn. Bring them to temperature, drain, and set aside. Step 5: Preheat your oven to 375⁰F. Step 6: Chop the onion, mushrooms, and garlic cloves. Step 7: In a sauté pan, melt 1 1/2 tablespoons of butter and add the onion, mushrooms, and garlic. Cook until the onions are translucent and the mushrooms start to get color, then season with salt and pepper. Step 8: Add the ground beef to the pan and break up any large chunks. Season with salt and pepper. Drain excess fat and return the pan to the stovetop. Step 9: Sprinkle the ground beef with the all-purpose flour and add the beef broth. Cook until the broth has thickened. Set aside. Step 10: To finish the mashed potatoes, add the liquid whole eggs and Parmesan and mix well. Step 11: To build the shepherd's pie, spray a baking pan with pan spray. Step 12: In the baking pan, spread the ground beef out flat. Step 13: Top with the peas and corn and mix them with the ground beef. Step 14: Top with the mashed potatoes and spread them out flat. Step 15: Garnish with paprika. Step 16: Cook the pie in your oven for 25 minutes or until it reaches an internal temperature of 165⁰F.
